Okay, so, here's the thing. I'm not a chef, I'm a cook, and I started teaching thirty-minute meals at a grocery store in Albany because people kept telling me they didn't have time. That was my whole big idea. Somebody could've told me to play it safe. Here's what I'd do.

Don't blow the savings on a fancy launch, that's the all-day roast nobody has time for. Do the thirty-minute version. What's the smallest real thing you can put in front of actual people this week? Do that. Meanwhile, keep whatever's paying the bills going on the back burner.

If people come back for seconds, you'll know, and then you go big. Eyeball it, taste it, adjust. You can absolutely do this. Get in the kitchen.
