Momofuku was a bad idea. A ramen bar from a burned-out ex-golfer with no reputation, in a city that did not care. Everyone smart said play it safe, and if I had listened you would not know my name. So here is my honest answer: bet on it, but bet like a cook, not a gambler.

Keep the downside survivable, rent and food money stay sacred. Then throw everything else at the smallest real version of the idea and let actual customers tell you if it is delicious. If it is, push hard. If not, change it fast. Safe and bitter is the worst dish there is.
