A one-week slip is an operational event, not a strategic one, so treat it that way. My clarifying question: did the date slip because the scope lacked trade-offs? Launches usually delay when a team tries to be everything to everyone. Reconvene, choose deliberately what not to ship, and tell the team why. Clear trade-offs restore morale faster than any pep talk, because choice is confidence.
