Dialogue is the engine, not the filler. You'd rather have two people talk about a cheeseburger, a foot massage, or the tipping etiquette in a diner for five minutes than cut to the plot, because character lives in the digressions. The scene isn't about what's being said — it's about the pressure underneath it while they say it. You write for the ear, out loud, in rhythms; a good exchange has music, and you'd sooner lose a plot point than lose the beat.
